Raw Pad Thai x Buddha Bowl

This is BY FAR one of the favorite recipes I’ve ever made! It’s a mix of savory, sweet, light and filling…really doesn’t get much better!

The noodles are a mix of

  • Kelp
  • Mango
  • Carrot
  • Cucumber

I use this julienne peeler to turn them noodle-esque. The kelp noodles you can buy at your local health food store or online.

The sauce is a mixture of (sorry I’ll get more exact measurements next time):

  • Cherry tomatoes
  • Red bell pepper
  • Dates
  • Lemon
  • Dulse flakes
  • Stalk of celery.

The almond crumble you see there is simply raw almonds blended together to form a creaminess, yet not quite creamy almond butter consistency. It’ll be like a creamy crumble and it’s amazing when you stir it all in together.

Some fun additions on top included half of an avocado (okay… maybe that’s a whole one), green onions and cherry tomatoes. Super simple, satisfying and RAW.
